A pot of Chicken Poblano Chowder and naked cookies………

I bet you saw the word naked and it caught your attention, didn’t it? Well, this is not that kind of blog! That’s a whole different kind of site! But don’t go there!!! Stay here….where there is soup on the stove cooking and the smell of freshly baked lemon sugar cookies fills the house.  So comforting.  We finally have some cooler weather with a little rain. Ahhhhhh, my favorite kind of weather. Daniel, I can see you rolling your eyes now. My friend Daniel HATES this weather. I love these drizzly, cloudy days. I love to bake in this kind of weather. I love to make soup in this kind of weather. I love to even take a short little nap…but no time for that. Too much to do. I have Halloween cookies to paint , mummy cake pops to make  and some caramel apples to make.

Well, I do hope you make this chowder. It is delicious. I suggest a dollop of sour cream and some broken tortilla chips sprinkled on top!! Enjoy!!

Recipe for Chicken Poblano Chowder

2 cups boiled shredded chicken                                                                    1 small onion, diced
2 cloves garlic                                                                                                     1 handful chopped cilantro
1 fresh jalapeno minced                                                                                 2 large fresh poblano chiles, chopped 
3 cups chicken broth (I used the broth that I boiled the chicken in)
1 cup milk or half and half                                                                             2 large potatos, cut in chunks
1 cup canned or frozen corn                                                                         1/2 cup of your favorite salsa

Put everything into a pot except the potatoes. Cook for about 30 mnutes. add potatos…simmer for another 30 minutes or so. Or you can do this in a crockpot too, Slurp it up!!!! yum yum

Ever feel like this at the end of a week????

fallencupcake  Long week…days at the office were a little stressful. I personally think we should have a slap a coworker day. LOL, just one day a month. But since I don’t think that will ever happen, I better just get into some serious baking.  Usually when I am feeing a little on the stressed side, I bake. I bake and I bake and I bake. But I am feeling a bit UN-bakerish. Must do something about that. It will be a busy baking time in the next week with Halloween orders. Yay, i get to paint cookies! My favorite thing to do. I will be making some ghosts, pumpkins, mummies, etc. I will post those pictures later in the week.

Pickin blueberries (muffins)

So, you know how I just recently posted a blueberry crumb muffin? Well, again with the blueberry muffins. I am on a quest for my GO TO Bluebee Muffin. I mean I suppose you dont have to just have ONE muffin recipe that you use. But I am looking for that one that says “make me, make me!” I found a recipe that sounded good, I fell in love with the picture. But it had one major problem. Now, everyone who really knows me, knows that I have this weird word association thing with food. If I don’t like the word, I will not eat it! Yep, it’s true. I can see some of you now, rolling your eyes, thinking “gosh she is so weird”. Mm-hmm, you know who you are. Ok, so one of those words I truly dislike, is YOGURT. It is an awful sounding word, right? Right? Anyone?? I have never tasted it….I never will. The word really bugs me. The recipe I found, calls for that awful sounding stuff. Hmmm, what to do…..ah-ha! Sour cream!!!! YES, I used sour cream. I also used orange zest instead of lemon zest and I made orange glaze instead of lemon glaze. Oh, and I used vanilla extract instead of almond extract. But otherwise it’s the same recipe as the one I found on line! haahhahahaa. Oh! and I used more bluebees. So basically, I created my own unique recipe and am I ever glad I did. Deeeeeeliciousl This one is more muffiny, where the last one I posted was more like a coffee cake. Still not quite there yet….my search continues. But in the meantime, this one just might work. Maybe.

Recipe

1  1/2 cups flour
1  tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3/4 cup sugar
1 egg
6 tablespoons butter
1/2 cup sour cream
zest of 1 orange
1/2 tsp vanilla
1 cup fresh or FROZEN blueberries

heat oven to 375. Mix softened butter and sugar together till creamy. add egg. Mix till incorporated.  Add sour cream, zest and vanilla. Add dry ingredients. Don’t over mix.  Gently fold in blueberries. Batter is THICK. scoop into a paper lined muffin pan. Fill to the top of each muffin cup. Sprinkle a few more blueberries on tops, slightly pushing them in. Makes 8 or 9. Bake 18 minutes. Once cooled, drizzle
on glaze: 1 cup powdered sugar, couple of squeezes of orange juice.

Friday….yes-s-ss-s-s-s–s-s-s

Oh happy friday!! The day was long. I mean really long. It dragged….I nodded off at my desk. One of these days, I swear my neck will snap from noddng off. I already fell outta my chair once. Yes, I sure did. I was reading my book at my desk enjoying my lunch. I felt myself getting dozey. The next thing I knew, my chair tipped over and I was pinned between the cubicle wall and my chair. Oh yes….so graceful I am.  Anywayyyyyyyyyyyyy, on to more important things like CUPCAKES! It’s cupcake Friday. Remember I told you that every Friday we have cupcake Friday at the office? Today’s cupcake was Triple Chocolate…..I sometmes call this one Triple Bypass. Yikes. It is a fluffy chocolate cake with an amazing chocolate super creamy yummy chocolate buttercreamcheesewhippy frosting. It’s sprinkled with bittersweet chocolate. It’s gooooooood…It is my favorite chocolate frosting. Sometmes when I am cleaning the bowl, some of it slips into my mouth. I don’t know how it happens, but when I least expect it, I will have a mouth full of frosting. Uh huh, really!! Maybe there is a weird entity that is lurking in my home that forces frosting in my mouth.
