This is one of my long time favorite dishes ever. I love red bell peppers. However, bell peppers in general, do not like me. Ohhh, the agony of heartburn….indigestion. But I have been craving this so bad. So, I took some anti heartburn stuff and thoroughly enjoyed this wonderful dish. I did make it a bit spicy, but if you follow my blog, by now, you know how much I love my spicy. Whenever I make this, I use a nice ribeye steak, but this time I used sirloin. Because I marinated it a bit beforehand, it was really very tender. If you are not a meat eater, you can just use tofu or just the peppers. Make some steaming hot rice and ohhhhhhh you will love this.
It’s quick and easy and you can use green or yellow bell peppers, but I prefer the red, since the flavor is milder and have a wee bit of sweetness to them.
Beef and Red Bell Peppers
1 lb top sirloin or a nice ribeye, sliced thinly
2 large red bell peppers, sliced
2 cloves of fresh garlic, minced
1 inch piece of fresh grated or sliced ginger
1 tblsp cornstarch
1 tblsp vegetable oil
1 tblsp soy sauce
Combine the beef, garlic, ginger, cornstarch, oil and soy sauce, in a bowl. After mixing it all together, let it sit for about 30 minutes.
Heat a large skillet with a bit of oil. Add the bell peppers and stir fry until tender. Remove the peppers and set aside. Add a little more oil to your skillet, and add the marinated beef mixture. Fry beef on medium high heat till browned. Add bell peppers. Sprinkle with soy sauce and maybe 1/4 – 1/2 cup water. Serve with rice.
